I am so excited to share my new find: “The Athlete’s Palate” cookbook, put out by the editors of RunnersWorld magazine. As we were browsing through Border’s the other night, my mom ran across this great little cookbook. I couldn’t be more stoked. Recipes for breakfast, lunch, dinner, soups, salads, desserts, and even beverages! AND, all marked with labels specified for training sessions or recovery meals. Each meal has a special note if they are in the “quick and easy” category which so many of us need in the craziness of life.
Yesterday morning I tried Mark Bittman’s Breakfast Couscous, chalk full of complex carbs, fruit, and even a little bit of protein. It was the perfect way to start the day. Whoever said eating healthy tastes bland has never taken the time to dive into the richness of the foods God naturally made! I am excited about this new find because it full of simple ideas with tons of flavors. My hope is to encourage you broaden your eating horizons; look for some new and fun recipes online, because I think eating healthy should be fun and tasty! The hardest part is just deciding what’s next: Quinoa Cookies, Kota Kapama, or a glass of Strawberry Pineapple Agua Fresca?!
